Commercial stoves have long used the same blue flame technology. With a low thermal efficiency of 30%, they take a long time to heat up and result in a higher ambient temperature in the kitchen. Even prepared foods lose moisture and nutrients due to the way they burn. In addition, the high carbon emissions make maintenance a nightmare. Over 20% of costs are spent on cleaning and sanitizing equipment in commercial kitchens.
These are the problems the client came to the Analogy design team with. Most of them can be solved by a better combustion process. For this, the burner technology was completely reinvented. By mimicking the way charcoal burns, a uniform radiant heat technology was used to achieve a thermal efficiency of 78%. Compared to the 30% efficiency of existing burners, this is a huge leap forward.
Because of the efficiency of the combustion, the stove leaves no carbon emissions. This makes cleaning utensils much easier.
Design path
The Analogy team conducted extensive ethnographic research to understand the different types of recipes used in commercial kitchens. They also researched chefs' cooking methods and styles to design the stovetop components.
For example, due to the rapid movements of a chef, a sturdy pan support was designed to protect the delicate ceramic surface of the burner.
Modular Design
The research also led to the selection of several types of cookware that could be adapted to a modular system. The main stove was designed as the base on which several accessories/modifications could be interchanged.
This allowed for efficient use of the kitchen space. In addition, it also reduced the number of SKUs required and significantly reduced manufacturing costs.
Within a short period of time, the product was adopted by several major hotel chains. Even the kitchens of the Prime Minister of India and the President of India are powered by Agnisumukh products.
Historically, stove manufacturers have never understood how chefs cook. And chefs have never understood how they were designed. When all that comes together now, you've created a much better designed stove that chefs love.
